We are sharing today that the pandemic cooking craze has impacted Charlotte Daily Photo. Today I should have been out hunting for a photo. Instead my wife and I were busy cooking. And we had a blast!

The only thing I can share, about Charlotte, is that this photo shows a typical condo kitchen. A granite counter top, a wrap around backsplash, and under counter lighting.

Now, about the pandemic cooking. We shifted to soy milk, early during the pandemic, because it can be purchased shelf stable (does not require refrigeration) and ordered online. Recently, to up our pandemic preparedness, we purchased a soy milk making machine. The soy milk is very good and we are pleased with our purchase. And, it turns out that there are recipes for soy mill pulp (okara) which is a byproduct from the process of making soy milk.

Today we made soy milk, hot chocolate from soy milk, okara chocolate pound cake, okara crackers, and okara granola. All were very good and fun to make.
